Título : APLICACIÓN Y EVALUACIÓN DE BIOPELÍCULAS CON BASE A MUCÍLAGO Y ALMIDÓN EN FRUTOS DE GUANÁBANA (Annona muricata L.)

Resumen : La poscosecha es una etapa del proceso agroindustrial que se delimita desde el punto de cosecha del fruto hasta su consumo o senescencia, sin embargo, algunos productos son altamente perecederos, lo que significa que tienen una corta vida de anaquel. Esto último es resultado de la alta tasa de respiración de los frutos después de la cosecha y las condiciones de manejo, así como factores extrínsecos como la temperatura y humedad relativa, lo que conlleva a un rápido ablandamiento en las paredes celulares y que, a su vez, hace del fruto un producto susceptible al daño mecánico y microbiológico. Dentro de las técnicas utilizadas en el almacenamiento de los productos hortofrutícolas se encuentra el uso de bajas temperaturas, atmósferas controladas y atmósferas modificadas, que ayudan a retardar los procesos metabólicos durante la maduración, sin embargo, temperaturas de refrigeración podrían causar daños por frio en los productos y el uso de atmosferas puede resultar costoso. Dentro de las alternativas para el almacenamiento de productos hortofrutícolas resalta el uso de recubrimientos comestibles elaborados a base de materiales renovables como lípidos, proteínas y polisacáridos. Los recubrimientos comestibles crean una capa semipermeable a gases que contribuye retardando los procesos de maduración en el fruto dando como resultado una vida de anaquel más prolongada. En este contexto, se evaluó el efecto de recubrimientos comestibles en frutos de guanábana provenientes de un huerto comercial ubicado en Tepic, Nayarit. Los frutos fueron utilizados para evaluar el efecto de recubrimientos a base de almidón y mucílago sobre la maduración de los frutos durante su almacenamiento poscosecha. La cosecha de los frutos se realizó en febrero (primera etapa) y septiembre (segunda etapa) de 2019, se utilizaron frutos en madurez fisiológica tomando en cuenta los 160 días después de la antesis, estado de madurez adecuado para la cosecha, así como la experiencia de corte del dueño del huerto. El objetivo de la primer etapa de la investigación fue evaluar los cambios en pérdida de peso, firmeza, pH, sólidos solubles totales, acide titulable y color, así como la actividad antioxidante por los métodos DPPH, ABTS y FRAP, el contenido de fenoles, flavonoides y vitamina C durante la maduración de frutos de guanábana sin y con recubrimiento a base de almidón (2 %), almacenados a 22 y 15 °C con una humedad relativa del 90 %, cuyos resultados fueron: los frutos recubiertos presentaron menor pérdida de peso (6.11 y 10.26 %) y mayor firmeza (39 y 19 N). La acidez titulable aumentó durante la maduración, observándose un porcentaje mayor en los frutos recubiertos y almacenados a 22 °C (0.94 y 0.8 %). El pH fue menor en frutos almacenados a 22 °C (3.9). La concentración de SST fue menor en frutos recubiertos y almacenados a 15 °C (11.29). El color disminuyó durante el almacenamiento de los frutos. Los frutos almacenados a 15 ºC con recubrimiento presentaron la mayor actividad antioxidante (DPPH y FRAP) (285 y 15.92 mg EAA/100 g.p.f.) respectivamente. Los frutos almacenados a 15 °C mostraron la menor actividad antioxidante (ABTS) (46.5 y 52.4 mg EAA/100 g.p.f.). La menor concentración de compuestos fenólicos se observó en los frutos almacenados a 15 °C (90.6 y 93.98 mg EAG/100 g.p.f.). La concentración de vitamina C y flavonoides fue mayor en los frutos con recubrimiento almacenados a 15 °C (31.79 mg EAA/100 g.p.f. y 95.93 mg EQ/100 g.p.f.). Se observó que el uso de recubrimientos comestibles a base de almidón (2 %) durante el almacenamiento poscosecha a 15 °C de los frutos de guanábana incrementó la vida de anaquel (12 días) y mantiene las propiedades bioquímicas sin causar alteraciones en el proceso de maduración. La segunda etapa de la investigación tuvo como objeto evaluar los cambios fisicoquímicos, bioquímicos y actividad antioxidante de frutos de guanábana con recubrimiento a base de mucílago (2%) y almacenados a 22 y 15 °C con una HR del 90 %. Se evalúo pérdida de masa, firmeza, color, sólidos solubles, acidez, pH, fenoles, flavonoides, vitamina C y actividad antioxidante. Los resultados obtenidos: los frutos con recubrimiento almacenados a 15 °C presentaron menor pérdida de peso (6.4 %), menor firmeza (29.7 N), mayor concentración de SST (10.4 °Brix), baja acidez (0.38 %). El contenido de fenoles totales disminuyó en los frutos con recubrimiento almacenados a 22°C (54.3 mg EAA / 100 g.p.f.). La mayor actividad antioxidante fue por el método DPPH en frutos recubiertos y almacenados a 15 °C (257.9 mg EAA / 100 g.p.f.). La concentración de vitamina C en frutos recubiertos y almacenados a 15 y 22 °C fue de 20.5 y 17.5 mg EAA / 100 g.p.f. respectivamente, concluyendo que el recubrimiento de mucílago de jamaica al 2 %, aplicado en frutos almacenados a 15 ° C, evita la pérdida de peso, disminución de la acidez titulable, incrementa el contenido de fenoles y de vitamina C; así mismo durante la madurez de consumo se incrementa la actividad antioxidante y una vida de anaquel de hasta ocho días sin observarse alteraciones en el proceso de maduración de los frutos.
Descripción : Postharvest is a stage of the agroindustry process that is delimited from the harvest of the fruit until the consumption or senescence. However, some products are highly perishable, which means that they have a short shelf life as a result of the high respiration rate of the fruits after harvest and the handling conditions, as well as extrinsic factors such as temperature and relative humidity, which leads to rapid softening of the cell walls. This behavior makes the fruit a product susceptible to mechanical and microbiological damage. Among the techniques used in the storage of fruits, the use of low temperatures, controlled atmospheres and modified atmospheres can be found. These technologies delay metabolic processes during ripening. Nevertheless, refrigeration could cause cold damage and the use of atmospheres can be expensive. Among the alternatives for the storage of fruits and vegetables, the use of edible coatings made from renewable materials such as lipids, proteins and polysaccharides rise as an alternative to the technologies previously mentioned. Edible coatings create a semipermeable gas layer that contributes to delay in the ripening processes in the fruit, causing a longer shelf life. In this context, the effect of edible coatings on soursop fruits from a commercial orchard located in Tepic, Nayarit was evaluated. The fruits were used to evaluate the effect of starch and mucilage based coatings on fruit ripening during postharvest storage. Fruits were harvested in February (first stage) and September (second stage) of 2019 at physiological maturity, around 160 days after the anthesis, adequate ripeness for harvest and according to the experience of the farmer. The lowest concentration of phenolic compounds was observed in fruits stored at 15 ° C (90.6 and 93.98 mg EAG / 100 g.f.w.). The concentration of vitamin C and flavonoids was higher in coated fruits stored at 15 ° C (31.79 mg EAA / 100 g.p.f. and 95.93 mg EQ / 100 g.f.w.). It was observed that the use of edible starch-based coatings (2%) during post-harvest storage at 15 ° C of soursop fruits increased the shelf life (12 days) and maintains biochemical properties without causing alterations in the process of maturation. The second stage of the investigation was aimed at assessing the physicochemical, biochemical and antioxidant activity of soursop fruits with a mucilage-based coating (2%) and stored at 22 and 15 ° C with a 90% RH. Loss of mass, firmness, color, soluble solids, acidity, pH, phenols, flavonoids, vitamin C and antioxidant activity was evaluated. The results obtained: coated fruits stored at 15 ° C showed lower weight loss (6.4%), lower firmness (29.7 N), higher SST concentration (10.4 ° Brix), low acidity (0.38%). The total phenolic content decreased in coated fruits stored at 22 ° C (54.3 mg EAA / 100 g.f.w.). The highest antioxidant activity was by the DPPH method in fruits coated and stored at 15 ° C (257.9 mg EAA / 100 g.f.w.). The concentration of vitamin C in coated and stored fruits at 15 and 22 ° C was 20.5 and 17.5 mg EAA / 100 g.f.w. respectively, concluding that the 2% rosella mucilage coating, applied to fruits stored at 15 ° C, prevents weight loss, decreased titratable acidity, increases the content of phenols and vitamin C; also during the maturity of consumption increases antioxidant activity and a shelf life of up to eight days without observing alterations in the process of ripening of the fruits.
