Descripción : An experiment was designed to study the composition and chemical characteristics of Mexican mangos (Mangifera indica L.) of Nayarit, mature and without application for human consumption. In the first experimental stage, the influence of the beginning and end of harvest (June and August) on the proportion of peel, seed and pulp of four representative samples from 96 ripe fruits, reduced to twelve per season, was evaluated. The mangos were of the Tommy Atkins variety, collected at random on the same day in two markets and two orchards (twelve fruits/site). In the second, a 2 x 3 factorial scheme was used to study epochal effect and components in the chemical characteristics of the mangoes. There was no epochal effect on the fresh weight of the fruits (417 and 454 g) nor on the percent of pulp (76.1 and 75.8 %). However, the proportion of peel and seed increased and decreased slightly (P < 0.05) in August with respect to June. There was no significant effect on the interaction epoch x component in the chemical indices. The season did not influence the MS content of the fruit (average, 26.4 %), but it did influence the NDNF and N content, which tended to increase somewhat (P < 0.05) in August with respect to June. The NDF content was different (P < 0.05) in shell, seed and pulp (40.1, 56.5 and 66.6 %). The level of N was lower (P < 0.05) in shell (0.48 %) than in seed and pulp (1.2 % in both cases), and was always low. It is suggested that mango parts, considered as industrial waste (peel and seed) may be a good resource for feeding ruminant animals. There is no evidence that the beginning and end of harvest have much influence on the physical and chemical characteristics of the fruits.
